This week's Savory Saturday recipe is actually a guest post from our friend, Amy A. This recipe sounds easy and would be so PERFECT for Sunday lunch/dinner. It can simmer in the crockpot while you're at church and you can walk in the door to it's yummy aroma! Thank you, Amy!
Bacon-Wrapped BBQ Chicken
(Amy said she got this off a blog but I don't know which one. If you happen to know the blog, feel free to give it a shout out!)
3-4 chicken breasts
½ c. BBQ sauce*****
1-2 apples, peeled and grated (Amy used applesauce – maybe ½ c.?)
1 lemon, juiced (leave it out if you use applesauce)
6 slices bacon
Mix BBQ sauce, apples and lemon together in a small bowl; set aside.Wrap chicken breasts in bacon strips and place in bottom of slow cooker.Pour sauce mixture over chicken.Set cooker to LOW and cook 8 hours.
*****Amy said she often makes her own BBQ sauce, but has lately been buying Montgomery Inn sauce. It’s from a restaurant in Cincinnati and they’ve started selling it at Super Wal-Mart. It tastes the most homemade without that heavy smoky flavor. She served this with baked rice and mashed sweet potatoes and it was a hit! AND she said, "I cut my chicken breasts in half, which requires a little more bacon. I do this for portion control. If my husband has a whole chicken breast then he usually wants a second helping. However, when I serve him 2 half portions then he feels like he’s eaten more. Don’t tell him I told you that!! " GREAT tip.

This sounds perfect! I love crockpot recipes. Do you think turkey bacon would work?
I can't imagine why turkey bacon wouldn't work! The texture will likely be a bit different, but this recipe doesn't cook up the bacon to "crispy" anyway; it just cooks through. If you try this recipe with turkey bacon let everyone know, as I'm sure others are curious too.

I can't wait to try this one, I made Amy's BBQ chicken from MH Recipes and it was delicious.
So, I made this dish last Sunday and it was a big hit, even with my hubby. I will say, I took Amy's advice to cut the chicken in half, which changed the cooking time. I left it on longer than it needed. I think I could have done 4-5 hours instead of the 8.
On another note, I had to throw out my crock pot after this one. It was so hot on the outside that I could have burned my hand. The countertop was really bad as well. I did worry about it at church, but praise God, he did protect the house. I called Rival/Crock Pot and told them what happened. They said it should not be this way. I have had this unit for almost 11 years so obviously, no warranty. But they gave me 25% off any new model. I think I will go for a programmable this time. Not a bad deal.
You're kidding me! You are the second person that has told me this happened in 2 days!!!! This happened to my mom's friend when she was making this recipe but she thought it was b/c it was a Harris Teeter giveaway crockpot that had been recalled.
